Super (Extra) Moist 2 Apple Pound Cake, almost like a Fruitcake



This recipe has a story, a small, about how it was done, and is as follows.

There were two apples, only two. And there was a girl, who liked to cook, That´s me. That didn´t know what to do with the apples. Thinking, thinking, thinking, an apple pound cake came up. But what about the other apple? Eating as it comes wasn´t an option. And as I checking the recipe, butter was out and the apple was in.

This is the brief summary of how I replaced butter, (110 g), for a red apple. The apple gives the same characteristics of butter without the fat content.




The cake  is very moist and quite aromatic, because of the spices, and the prunes and raisins.
Maybe if in your country, the summer is starting, this recipe is not for you. But you can keep it in a safe place for when chilling times arrives. And don´t forget the place.

As I usually put all my pound cakes a bit of sugar on top before baking, so it has a crispy crust. To make things more interesting.

Super (Extra) Moist 2 Apple Pound Cake
Flour 120 g
Baking soda 3/4 tsp
Salt, 1/4 tsp
Cinnamon 1/2 tsp
Ground ginger 1/4 tsp
Pinch ground black pepper
Common sugar 175 g
Egg 1
Almonds 50 g
Raisins 50 g
Prunes 50 g
Sweet wine, 2 tbsp
Apples, 2 (Red Delicious or Granny Smith)
Common sugar, extra

- Preheat oven to 170°C
- Soak the raisins in the wine
- Chop the almonds coarsely and prunes
- Peel both apples and cut one of them them into cubes of 1 cm
- Cut the other apple into pieces and cook, in a saucepan with 1 cm of water, until tender and can puree them. O in the microwave in the same manner.
- Mix separately the dry ingredients
- Mix in another bowl the egg with the sugar
- Add the dry mix to the egg
- Add the applesauce, mix and then add the remaining ingredients
- Pour into pound cake mold 20 cm long, well buttered and floured
- Sprinkle sugar to make a crispy crust
- Cook for 45 minutes or until a toothpick comes out clean.

Store in covered container for 5 days.

If you only have one apple, use butter instead of applesauce with the amount indicated above. Or try replacing both apples with pears.
